1/3 cup butter or margarine, softened
2/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/2 cup unsweetened applesauce
1 1/4 cups all-purpose flour
1 1/4 cups rolled oats
- In medium mixing bowl beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, cinnamon, and baking soda. Beat till combined, scraping sides of bowl. Beat in egg and applesauce till combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour and the rolled oats.
- Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in a 375 degree oven for 8 to 10 minutes or till lightly browned. Transfer cookies to a wore rack and let cool. Makes about 30 cookies.
