Taco Bake



This is a great way to use up some extra taco meat!

Ingredients:


4 small flour tortillas
1 small can refried beans
1 lb. seasoned taco ground beef
1 cup shredded cheese (or more if you like it really cheesy!)
salsa
sour cream




Heat oven to 350 degrees. Spoon 1 tbsp refried beans onto bottom of pie dish and spread out. Place tortilla on top and push it down to keep it from slipping. Spread some beans, sprinkle taco meat and cheese on tortilla. Repeat with remaining layers. Place one tortilla on top and place in oven for 20 minutes. Top with salsa and sour cream.

1-2-3 Mac and Cheese


This is my husband's favorite macaroni and cheese. It's very simple and yet so yummy.

Ingredients:

16 oz. package elbow macaroni
3 cups shredded cheddar cheese


Cook macaroni according to package directions. Drain. Pour noodles back into pot. On low heat stir in cheese. That's it! The cheese is a little stringy and Collin thought they were spider webs. I think that's why he enjoyed it so much!

Breakfast Sundae


This was simple, fast, and easy. It was fun having a breakfast that felt like I was eating dessert!
Ingredients:
Cut up fresh fruit (watermelon, grapes, pineapple, strawberries, etc.)
Yogurt
Crumbled golden grahams
Layer fruit on bottom, top with favorite yogurt (I used banana cream) and top with crushed cereal.

Mini Pigs in a Blanket

This is a quick easy kid meal.
Ingredients:
Mini Smokies
Pillsbury refrigerator cresent rolls

I unrolled the cresent rolls and cut into 4 triangles. Roll one smokie inside each fourth. Continue with the rest of the dough. Place on greased pan and cook according to dough directions about 8-10 minutes or until golden brown.

Collin loved them!

Peach Melba Muffins

These were very yummy although I did leave out the brandy and added 1 tbsp of vanilla instead. I also used strawberry jam instead of raspberry.

Peach Raspberry Melba Muffins


1 cup diced fresh peaches
1/2 cup chopped walnuts
1/2 teaspoon cinnamon
1 egg
2 cups all-purpose flour
1 cup milk
1/2 cup sugar
1/3 cup butter, melted
2 1/2 teaspoons baking powder
2 tablespoons brandy
1/2 teaspoon salt
Raspberry jam


In a bowl, sprinkle peaches with cinnamon and set aside. In a separate bowl, sift together flour, sugar, baking powder and salt; stir in walnuts. In a separate bowl, whisk egg, milk, butter and brandy together and stir into peaches. Make a "well" in the dry ingredients and fill with peach mixture. Mix lightly, just until moistened. Fill 12 greased muffin cups half full; place 1 teaspoon of raspberry jam in the center of each; cover with batter until 2/3 full. Bake at 400° for 20 to 25 minutes until golden brown.


Yield: 12 muffins

Chilly Chocolate Mousse Crepes

This was a very simple recipe out of the new Hungry Girl Cookbook. My daughter and I loved these! Each one is also only 52 calories.

*Ingredients:

2 ready-to-use dessert crepes (30 to 50 calories each)
1 Jell-O Chocolate Vanilla Swirl Sugar Free Pudding Snack
1/2 cup Cool Whip Free


*Directions:
  • Place cool whip and pudding in a bowl and stir until well blended.
  • Gently tear or cut each crepe in half. Into the center of each crepe half, spoon one-quarter of the pudding mixture. Fold crepes envelope style (sides in first), ensuring that there is nowhere for the mixture to seep out. Place crepes in the freezer for at least 1 hour.
  • Spray a pan with nonstick spray and heat over a medium-low flame. Beginning with the seam-sides facing up, heat crepes for 1 minute. Carefully turn crepes over and heat for an additional minute.
  • Crepes will be slightly browned 'n toasty on the outside, but cool 'n creamy on the inside!
  • Makes 4 servings.

I altered this by using a whole small homemade crepe and all chocolate pudding for us chocolate craved girls!

Kami's Tuna Melt

I love tuna so I decided to make me a tuna melt the other day. I've never made one before but it turned out great! This would also be good if you mix shredded carrots or diced pickles in with the tuna.

Ingredients:

4 slices of bread, lightly toasted
1 small can tuna in water
2 tbsp miracle whip
4 slices tomato
sliced cheddar cheese
salt and pepper


Pre-heat broiler. Mix drained tuna with miracle whip. Divide tuna mixture in half and spread onto 2 slices of toast. Place toast on baking sheet. Place 2 tomato slices on each of the remaining pieces of toast and sprinkle with a pinch of salt and a dash of pepper. Place cheddar cheese on top of tomatoes. Place under broiler until cheese is melted. Put sandwiches together and enjoy a yummy lunch for two!
